What are your preferences?
As for stuff to watch, she should look into DirecTV. They just announced over CES the largest rollout of HD content EVAH. 100 new HD channels are being added to the service, which will finally make it worth buying rather than just using an antenna.
Anything below 47" in a TV, don't bother with 1080p at all and 1080i is optional if you get a deal. LCD will be the best option for most people. I recommend rear projection LCD TV's with at the very least a 3,000:1 contrast ratio. Samsung makes very nice sets, and Sony has some good budget priced HD tv's. You can pick up a nice 55" 1080i set for around $2k nowadays.
For receivers I recommend Denon for the most part. They're a good mid range company.
Speakers I'd go with Klipsch, Harmon Kardon, or Bose. In that order.
HD-DVD and Blu-Ray players are a waste of money. Get an upconverting DVD player, and as long as the receiver supports HDMI you'll be fine until we start downloading our HD movie content.
